Method
- 1
In a large bowl, combine Sanmati Upwas Bhajani, mashed potatoes, green chillies, coriander, cumin seeds, and rock salt.
- 2
Knead into a soft dough using minimal water. The potato helps bind the flour.
- 3
Divide into 6 equal portions. Place each portion on a greased plastic sheet or banana leaf.
- 4
Pat gently with wet fingers into a round thalipeeth (about 5–6 inches diameter).
- 5
Heat a tawa and carefully transfer the thalipeeth onto it. Apply ghee on top and around the edges.
- 6
Roast on medium flame until golden brown and crisp on both sides. Serve hot with curd or peanut chutney.
Notes
- Use boiled potatoes for better binding—Upwas Bhajani has no gluten.
- Pat the thalipeeth directly on the tawa if comfortable, or use a greased plastic sheet.
- Best enjoyed fresh and hot with dahi or groundnut chutney.
