Method

    Dry roast Sanmati Rajgira Pith in a kadhai on low flame for 5–6 minutes until fragrant. Set aside.

    In the same kadhai, heat ghee and add the roasted rajgira pith. Roast on low flame for 5–7 minutes, stirring continuously.

    Add powdered jaggery or sugar and mix well. Cook for 2–3 minutes until the mixture comes together.

    Remove from flame. Add cardamom and nuts. Let it cool slightly until manageable to touch.

    Grease your palms with ghee and shape into round laddoos while still warm. Store in an airtight container.

  • Shape laddoos while the mixture is still warm—it hardens as it cools.
  • Use jaggery for a traditional vrat-friendly version.
