In a bowl, combine Sanmati Sabudana Pith, mashed potatoes, green chillies, coriander, cumin, and rock salt.

Knead into a soft dough. Add a little water only if needed—potato provides moisture.

Divide into 4 portions. Grease your palms and pat each portion into a round thalipeeth on a plastic sheet.

Heat a tawa, apply ghee, and carefully place the thalipeeth. Roast on medium flame.

Apply ghee on top, flip when golden, and cook the other side. Serve hot with curd or peanut chutney.

- Sabudana pith is gluten-free—potato is essential for binding the dough.
