For baati: Mix wheat flour, semolina, ghee, and salt. Add water to make a hard dough. Rest for 15 minutes.

Shape into round balls and bake in a preheated oven at 180°C for 25–30 minutes until golden, or cook on direct flame.

For dal: Pressure cook all three dals with turmeric until soft. Temper with cumin, onions, tomatoes, and spices.

Add cooked dal to the tempering, add water for desired consistency, and simmer for 5 minutes.

Break the hot baatis, pour generous ghee over them, and serve with dal, churma, and onion salad.
Notes
- Baati dough should be hard—add minimal water for the right texture.
- Traditionally baatis are baked in a clay oven or over cow dung cakes for authentic flavor.
- Serve baatis hot with plenty of ghee for the best experience.
