Sev Masala Sabzi

A quick and spicy Maharashtrian style curry made with Sanmati Sev Masala and crispy sev, perfect with roti or bhakri.

    In a mixing bowl, combine besan, rice flour, hing, turmeric, salt, and hot oil.

    Gradually add water to make a soft dough that is not sticky.

    Grease the sev maker, fill it with dough, and use a fine or medium sev plate.

    Heat oil in a deep pan and press sev directly into the hot oil in circular motions.

    Fry on medium flame until crisp and golden, then drain on tissue paper.

    While sev is still warm, sprinkle Sanmati Sev Masala evenly and toss gently.

    Let it cool completely and store in an airtight container.

Notes

  • Add sev only before serving to keep it slightly crunchy.
  • You can adjust the gravy consistency by adding more or less water.
  • Pairs well with bajra bhakri or simple chapati.
