In a mixing bowl, combine besan, rice flour, hing, turmeric, salt, and hot oil.

Gradually add water to make a soft dough that is not sticky.

Grease the sev maker, fill it with dough, and use a fine or medium sev plate.

Heat oil in a deep pan and press sev directly into the hot oil in circular motions.

Fry on medium flame until crisp and golden, then drain on tissue paper.

While sev is still warm, sprinkle Sanmati Sev Masala evenly and toss gently.
