Follow these steps for best results

In a bowl, combine mashed potatoes, Sanmati Rajgira Pith, green chillies, cumin seeds, rock salt, and coriander.

Mix well and knead into a soft dough. Add a little warm water if needed.

Divide into equal portions and roll out into small thick rotis/polis using a rolling pin (or pat with hands using a plastic sheet).

Heat a tawa (griddle) and roast each poli on medium flame with ghee/oil until golden spots appear on both sides.

Serve hot with curd, peanut chutney, or upwas sabzi.
Chef's Tips
- Use boiled potatoes to bind the flour since rajgira pith has no gluten.
- Pat the poli on butter paper or plastic sheet to avoid sticking.
- Best eaten hot and fresh as rajgira polis can dry out quickly.
