    Rinse Sanmati Bhagar and soak for 10 minutes. Drain and set aside.

    Heat ghee in a heavy-bottomed pan, add bhagar and sauté for 2 minutes on low flame.

    Add milk and bring to a boil. Reduce flame and simmer, stirring occasionally, for 20–25 minutes.

    When bhagar is cooked and milk has thickened, add sugar and cardamom. Mix well.

    Garnish with nuts and saffron. Serve warm or chilled.

  • Use full-fat milk for a richer, creamier kheer.
